Meat Loaf (Birthday) Cake

I have gotten more than one request for this recipe, to make it diabetic friendly you need to replace the mashed potatoes with mashed sweet potatoes.

Meat Loaf Cake 
2 Loaf pans (Double the recipe if you want to use a Bundt pan as seen in picture.) 
1 pound ground beef
1 pound ground turkey
1 pound ground pork (try not to substitute this out ask the meat dept to make you some if they don't have any)
2 eggs
3 tablespoons dried parsley, or a fresh bunch chopped fine 
1 tablespoon of dried basil or a fresh bunch chopped fine
A handful of fresh oregano can also be added. 
1 zucchini shredded
3 stalks celery (de-veined) shredded
3 med carrots peeled and shredded
1 small white onion diced. 
1 teaspoon salt (if you must) 
1 teaspoon fresh ground black pepper 
some bacon slices. when making a Bundt style put these on the bottom of the bundt pan it helps the "cake" release.

To assemble the cake you will need

1 batch mashed potatoes 
1 pint cherry tomatoes

For the Gravy (optional)
1 package Mushrooms
Oil
Beef stock if needed
Corn starch

Preheat oven to 350 degrees F. 
In a large mixing bowl mix the meat and eggs together. Your hands do this very well, but gloves help cause the meat is cold! Add in the herbs and veggies and blend. When well blended put in greased pans 
If in a loaf pan put slices on top if in a Bundt pan put slices on bottom to help it Un-stick later.
Bake for 90 minutes. 

Prep mashed potatoes just prior to the meat loaf coming out. I recommend a potato ricer you will be piping these.  
Fry up mushrooms in oil and set aside till cake is done. 
Pour the drippings into the mushroom pan, if there is not enough for gravy add some beef stock. 
Mix about a tablespoon of corn starch into cold water, when well blended add to the drippings, and bring to a simmer.  The gravy should thicken, add more corn starch as needed.
Keep warm till time to serve, do not let it boil.  

With a towel wrapped around a ziplock bag with one corner cut off about 1/2 inch from the edge. Fill the bag with mashed potatoes. Push out any air and zip it tight being careful to not burn yourself. 
Using a sharp boning knife, run it along all the edges of the pan. Remove the cake (flip it over with a plate on top usually works be careful!).  Take off any bacon that does not look pretty.
Now pipe on hot mashed potatoes.  Place tomatoes on top decoratively.

Serve hot with the mushroom gravy on the side. Feeds about 8 people.
